M is for Menu Plan Monday: Dinner Plans

This week on Blogging Through the Alphabet we are focusing on Letter M posts. I really need to get things back in order so I've decided to start meal planning again to help save money and time.

This week I'd like to share my Menu Plan Monday dinner plans. I like having a list when grocery shopping, because it keeps me focused and I'm less likely to splurge when I have one.

Menu Plan Monday for January 25th-30th

Sunday - Southwestern Chicken Fajita Bean Soup

Monday - Crispy Beef and Cheese Tacos and Italian Salad Kit

Tuesday - Crispy Beef and Cheese Tacos and Italian Salad Kit

Wednesday - Italian Sausage with Spinach Cheese Ravioli + Spinach Salad

Thursday -  Italian Sausage with Spinach Cheese Ravioli + Spinach Salad

Friday - Baked Chicken Breast, Au Gratin Potatoes, and Rosemary Asparagus

Saturday -  Chicken Breast, Au Gratin Potatoes, and Rosemary Asparagus

Sorry I don't have any interesting photos or website links this week. I am keeping things simple and quick.

Menu Plan Monday: Dinner This Week

Planning meals for only 2 people while providing variety has proven to be a difficult task. I would LOVE a few suggestions in the comment section to help us with our meal planning adventures. We are looking for healthy, clean meals that will last a couple days. We don't mind leftovers if it saves money and time spent in the kitchen. This is our weekly plan. We cook three main dinners each week.

Monday
Spaghetti and Italian Sausage Links + Salad

Tuesday
Spaghetti and Italian Sausage Links + Salad

Wednesday
Dinner: Beef and Black Bean Enchilada Casserole + Spinach Salad + Sweet Cornbread

Dessert: Brownie Sundaes

Thursday

Friday
Shrimp and Sausage Veggie Stir Fry

Saturday
Shrimp and Sausage Veggie Stir Fry

Sunday
Italian Turkey Pizza Stuffed Stromboli

Menu Plan Monday: March 23rd, 2015

It was tough last week planning meals for only one. I ate frozen soups most of the week for dinner. Thankfully, my daughter is back home so I can start meal planning again. We're sticking to tried and true meals this week to make things easier. Visit the linky below for recipe ideas. I am hoping to try more new recipes in the near future.

Breakfast - Smoothie + Pecan Cream Cheese Muffin
Lunch - Turkey and Cheese Wraps + Avocado
Dinner - Turkey Burgers + Spinach Salad

Lunch - Grilled Turkey or Ham Cheese Sandwich + Sugar Snap Peas

Menu Plan Monday: February 23rd, 2015

A cold front arrived on Sunday! It's a little chilly this week so we are making several soup dinner meals to keep us warm and cozy. I definitely spend a lot less on groceries when I take a few minutes to meal plan each week. Our grocery shopping day is Wednesday so we pick up staples and ingredients needed later in the week. I also try to plan meals at the beginning of the week based on what we already have in our fridge and pantry. This system seems to be working for us.  

Monday
Breakfast - Cereal + Fruit
Lunch - Turkey and Cheese Sandwiches + Carrots
Dinner - Sausage and Hamburger Quiche + Romaine Salad

Tuesday
Breakfast - Sausage Hamburger Quiche + Kiwi 
Lunch - Tuna Cheese Melts + Broccoli
Dinner - Beef Tacos + Asparagus

Wednesday
Breakfast - Egg Milk + Nutella Toast + Blueberries
Lunch - Ham and Cheese Sandwiches + Bell Peppers
Dinner - Beef Taco Leftovers

Thursday
Breakfast - Yogurt Berry Smoothies + Caramel Rice Cake
Lunch - Peanut Butter Honey Sandwiches + Broccoli

Friday 
Breakfast - Blueberry Lemon Pancakes
Dinner - Chicken Dumpling Leftovers

Saturday

Menu Plan Monday: February 2nd, 2015

Meal Planning is really helping us! We aren't wasting as much food as we used to or buying as many groceries each week. Thinking about our meals ahead of time only takes a short amount of time out of my day. Every Sunday nigh . . .  I glance in my pantry, freezer, and refrigerator to figure out which ingredients I already have on hand in order to plan meals around those ingredients. We'll eat a meal twice a week and then I'll freeze the leftover portion for those solo weekends when Alyssa is visiting her father.

Monday
Breakfast - Egg Muffins + Fruit
Lunch - Tuna Cheese Melts + Carrots
Dinner - Taco Soup + Cornbread

Tuesday
Breakfast - Yogurt Berry Smoothies + Hardboiled Eggs
Dinner - Baked Fish + Honey Sweet Potatoes + Rosemary Asparagus

Wednesday
Breakfast - Raisin Oatmeal + Hardboiled Eggs
Lunch - Peanut Butter Honey Sandwiches + Bell Pepper
Dinner - Olive Garden Mother-Daughter Dinner Date

Thursday
Breakfast - Biscuits and Sausage Gravy
Lunch - Chicken Salad Sandwiches + Celery
Dinner - Turkey Black Bean Enchiladas + Broccoli

Friday 
Lunch - Turkey and Cheese Pinwheels + Sugar Snap Peas
Dinner - Turkey Black Bean Enchiladas + Strawberry Spinach Salad

Saturday
Breakfast - Fruit and Nut Oatmeal + Scrambled Eggs
Lunch - Grilled Turkey and Cheese Sandwiches and Carrots

Menu Plan Monday: January 26th, 2015

Planning a menu is definitely helping me save money on groceries. Our plans last week moved around a bit, but the meals were mostly the same. It was a successful week!

I would still like to learn more about freezer cooking, saving money on groceries using coupons, and adding more variety to our meals. It is much harder planning a menu for only two people now with one of those individuals being a child.

Breakfast - Blueberry Lemon Pancakes + Hardboiled Eggs
Lunch - Tuna Cheese Melts + Sugar Snap Peas
Dinner - Turkey Burgers and Spinach Salad 

Friday 
Breakfast - Yogurt Berry Smoothies + Rice Cake
